Solution to improve tenderness

It reduces starch retrogradation, improving tenderness and extending the shelf life of the final product.

Solution for salt reduction or replacement

It allows salt reductions or total salt replacement from bakery products. It provides the same flavour intensity and with no need of significant changes in production parameters.

Solution to increase mass stability

It increases the stability of the dough, giving the bread a higher volume and better definition of the blooming.

Solution for sugar reduction or replacement

It provides sweetness and improves the baking color in sweet corn breads, replacing part of the added sugar and thus improving the nutritional profile of the final product. It replaces the functionality of sugar, improving, in addition, the moisture of the crumb.

Solution to increase the moisture and reduce costs

Increases the moisture capacity of the dough up to 3%, thus providing a better profitability of the final formula.
