After several tests at Idealis, our Innovation Lab, we have verified that when applying our proposal, greater flexibility is obtained for longer periods of time, allowing the tortilla to be rolled and folded without cracking and breaking for several weeks.

We also wanted to compare the mouthfeel in terms of hardness, cohesion and moisture, achieving a significantly more moist sensation and a less disaggregated structure in the tortilla, achieving a more pleasant mouthfeel than in control references.
