Consumers are increasingly aware of the ingredients they consume, are more health-conscious and prioritise natural ingredients and foods in their diet. Thus, as shown by the study published by C&R Research On consumer behaviour for bakery products, the clean label trend is a reality, also in the bakery sector.
Consumers want fewer (and healthier!) ingredients.
The study points out that more and more consumers are looking closely at the packaging of products to read the list of ingredients used. Thus, 56% of bakery consumers say they prefer foods that are made with recognisable products and 65% say they prefer a short ingredient list. Why? Because they are looking for trust and traceability.
But, in order to understand what the consumer prefersfirst of all we need to know what it considers natural and clean. The study indicates that many consumers reject bakery products with ingredients that are difficult to pronounce (37%), perceived as unhealthy or not "good for you" (29%) or not natural (22%). Therefore, consumers of bakery products tend to prefer ingredients that are familiar to them: fibre, calcium and yeast are the ones most consumers identify as "clean".

Designed for bakery products with a long shelf life (bread, brioche, biscuits, muffins or Mexican omelettes), replaces preservative alternatives such as calcium propionate (additive E282), sorbic acid (E200) or alcohol, commonly used in the food industry.
But if there is one thing that stands out about this solution it is that it you will not have to modify the conditions of your production process and it will not add any flavour to your final product.It only provides the preservative function!
